Ingredients

  • 1 cup vegetable oil
  • 4 large eggs beaten
  • 1 cup granulated sugar
  • 2 cups pecans finely chopped
  • 1 1/2 cups self-rising flour
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking dish using butter or nonstick spray.
  • In a large bowl, mix together the granulated sugar, brown sugar, beaten eggs, and vegetable oil until thoroughly combined.
  • Slowly add the self-rising flour and salt, stirring just until the dry ingredients are fully incorporated.
  • Stir in the vanilla extract and fold in the finely chopped pecans gently.
  • Pour the prepared batter into the greased baking dish, spreading it evenly.
  • Place the dish in the preheated oven and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Notes

For a gluten-free variation, replace the self-rising flour with a gluten-free self-rising blend. These blends are widely available and will allow your Pecanbread to rise beautifully without gluten. Be mindful that gluten-free flours may absorb more moisture, so if the batter appears too thick, add a bit more vegetable oil to maintain the perfect texture.
