Ingredients

  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Lemon slices for serving
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoons freshly squeezed lemon juice
  • 1 pound large shrimp peeled and deveined
  • Fresh chopped parsley for garnish

Instructions

  • In a large mixing bowl, combine the olive oil, lemon juice, salt, black pepper, oregano, paprika, and garlic powder, whisking until the marinade is fully emulsified.
  • Gently fold the shrimp into the marinade, ensuring each piece is thoroughly coated; allow to marinate for at least 15 minutes, and no more than 2 hours.
  • Thread 4 to 6 shrimp onto each presoaked skewer and set them aside on a clean plate while assembling the rest.
  • Preheat a grill or grill pan over medium-high heat, then cook the skewered shrimp for approximately 2 to 3 minutes per side, or until they turn pink and opaque throughout.
  • Transfer to a serving platter and garnish with fresh parsley and lemon slices, if desired.

Notes

Storage: Keep leftovers in a sealed container in the refrigerator for up to 3 days. Reheat gently in a skillet with a touch of olive oil or in the microwave.
Make Ahead Tips: The marinade can be prepared up to 5 days in advance. While marinating the shrimp ahead is convenient, avoid exceeding 2 hours to prevent the lemon juice from precooking the shrimp.
