Ingredients

  • Pinch of freshly ground black pepper
  • ¼ teaspoon fine salt
  • 1 pound fresh green beans trimmed (or use a 12-ounce package of pre-trimmed beans)
  • 2 teaspoons olive oil or avocado oil
  • Optional: freshly grated Parmesan chopped bacon, toasted almonds, or a squeeze of lemon juice

Instructions

  • Set your oven to preheat at 425°F.
  • Arrange the green beans evenly across a large rimmed baking sheet. Drizzle with your choice of oil, then sprinkle with salt and a pinch of pepper. Toss thoroughly to ensure each bean is evenly coated. Spread them out so they lie in a single layer across the sheet. (Tip: Lining the sheet with parchment paper eases cleanup but omitting it allows for more caramelization.)
  • Place the pan in the oven and roast the green beans for 10 to 12 minutes, or until they reach your desired level of tenderness. For a slightly crisp, browned texture, extend roasting by an additional 1–2 minutes.
  • Once done, transfer the green beans to a serving dish. Finish with any of the optional toppings, if using.
