Ingredients

  • 1 teaspoon cinnamon
  • cup brown sugar
  • ½ teaspoon salt
  • pounds baby carrots or chopped regular carrots
  • ¼ cup salted butter melted

Instructions

  • Preheat your oven to 425°F and prepare a baking sheet by lining it with parchment paper or foil for easy cleanup.
  • In a large mixing bowl, combine the melted salted butter, brown sugar, cinnamon, and salt. Mix thoroughly until the ingredients form a smooth coating.
  • Using a paper towel, gently pat the baby carrots dry to ensure the seasoning adheres well. Add the carrots to the bowl and toss them until evenly coated with the mixture.
  • Spread the carrots out on the prepared baking sheet in a single layer and roast for 20–25 minutes, turning them halfway through the cooking time. To test for doneness, pierce a carrot with a fork; it should be tender.
  • Once roasted, transfer the carrots to a serving plate. Serve warm and enjoy!
