Oven Baked Chicken Breast

  • 2 teaspoons olive oil
  • 1 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 4 chicken breasts 150–180g / 5–6 oz each
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano or thyme or preferred herb
  • 1 1/2 tablespoons brown sugar
  • Finely chopped parsley optional, for garnish

Instructions

  • Preheat the oven to 425°F (220°C), or 200°C if using a fan-forced oven. Flatten each chicken breast to a uniform thickness of approximately 1.5cm (0.6 inches) at its thickest point by gently pounding with a rolling pin, mallet, or even your fist to ensure even cooking and tenderness. Combine all seasoning ingredients in a small bowl. Line a baking tray with foil and parchment paper. Lay the chicken smooth side down on the tray, drizzle with 1 teaspoon olive oil, and rub it in thoroughly. Sprinkle half of the seasoning blend over the surface. Flip the chicken, repeat the oil drizzle and rub, then coat with the remaining seasoning, ensuring an even layer across all visible surfaces. Bake for approximately 18 minutes until the top appears golden or the internal temperature reaches 165°F (75°C). Once done, remove the tray from the oven and transfer the chicken directly to serving plates. Let it rest for 3 to 5 minutes before serving. Optionally, finish with a sprinkle of finely chopped parsley.

Notes

If the chicken breasts exceed 250g (8 oz), halve them horizontally to create thin cutlets and skip the flattening step, ensuring they remain under 1.5cm in thickness. This recipe also adapts well to boneless, skinless chicken thigh fillets—adjust the cooking time to 25 minutes for small to medium thighs or 30 minutes for larger ones.
