Instructions
In a large saucepan, combine 5 1/2 cups of the whole milk, sugar, and salt. Heat over medium-high until the mixture reaches a boil.
Add the rice to the boiling mixture, then reduce the heat to low, ensuring a gentle simmer.
Allow the mixture to cook, stirring occasionally, for 50 to 60 minutes, or until it thickens to the consistency of yogurt.
Once thickened, remove the saucepan from heat and stir in the vanilla extract.
Allow the pudding to cool, then refrigerate. Stir in the remaining 1/2 cup of milk just before serving. If desired, sprinkle with ground cinnamon.
