Ingredients

  • 6 cups whole milk divided
  • 1/2 cup long grain white rice heaping half cup
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • Ground cinnamon to taste (optional)

Instructions

  • In a large saucepan, combine 5 1/2 cups of the whole milk, sugar, and salt. Heat over medium-high until the mixture reaches a boil.
  • Add the rice to the boiling mixture, then reduce the heat to low, ensuring a gentle simmer.
  • Allow the mixture to cook, stirring occasionally, for 50 to 60 minutes, or until it thickens to the consistency of yogurt.
  • Once thickened, remove the saucepan from heat and stir in the vanilla extract.
  • Allow the pudding to cool, then refrigerate. Stir in the remaining 1/2 cup of milk just before serving. If desired, sprinkle with ground cinnamon.
