Ingredients

  • 1 bay leaf
  • 1 pound lean ground beef
  • 10.75 ounces condensed tomato soup 1 can
  • 1 teaspoon Italian seasoning
  • 3 cups frozen mixed vegetables or freshly chopped vegetables
  • 2 cloves garlic minced
  • 1 onion diced
  • 28 ounces canned diced tomatoes with juices 1 can
  • Salt and black pepper to taste
  • 2 teaspoons Worcestershire sauce
  • 3 ½ cups beef broth
  • 2 medium potatoes peeled and diced

Instructions

  • In a large pot over medium heat, sauté the onion, ground beef, and garlic until the beef is fully browned and no pink remains, then carefully drain the excess fat. Add the diced potatoes, beef broth, canned tomatoes with their juices, condensed tomato soup, Worcestershire sauce, Italian seasoning, and bay leaf. Cover and let the mixture simmer for 10 minutes. Incorporate the mixed vegetables, then continue to simmer for an additional 15 to 20 minutes, or until the potatoes reach a tender consistency.
