  • 1 tablespoon cooking oil
  • 1 pound ground beef preferably 93/7 lean
  • ½ cup white onion finely chopped
  • ¼ teaspoon dried oregano
  • 1 teaspoon onion powder
  • 2 ¼ cups low-sodium beef broth
  • ¼ teaspoon ground cumin
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 ½ cups shredded sharp cheddar cheese
  • ¼ teaspoon ground black pepper
  • ½ cup uncooked long grain white rice
  • 1 teaspoon chili powder
  • ¼ cup tomato paste

Instructions

  • In a large skillet, heat the cooking oil over medium heat. Add the ground beef and chopped onions, cooking until the beef is browned and fully cooked, with no pink remaining. Drain any excess grease and return the beef to the pan.
  • Stir in the beef broth, rice, tomato paste, onion powder, garlic powder, chili powder, salt, cumin, oregano, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer. Cook for 20 to 25 minutes, or until the rice is tender.
  • Once the rice is fully cooked, remove the skillet from the heat. Uncover, sprinkle the shredded cheddar cheese evenly over the top, and cover again to allow the heat to melt the cheese.
  • Serve the casserole warm, pairing it with a side dish of your choice.
