Ingredients

  • 5 small potatoes peeled and sliced
  • 2 pounds ground beef browned
  • 1 ½ cups milk
  • 2 cans cream of mushroom soup
  • 1 ½ cups shredded cheese Colby Jack or cheddar
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C).
  • Brown the ground beef in a skillet, then set it aside.
  • In a large bowl, whisk together the cream of mushroom soup, milk, and season with salt and pepper. Stir until smooth, then set aside.
  • Lightly coat a 9x13-inch baking dish with nonstick spray.
  • Begin layering the casserole: first a layer of sliced potatoes, followed by browned beef, then the soup mixture, and a sprinkling of cheese. Repeat the layers, finishing with a final layer of cheese on top.
  • Cover the dish with foil and bake for 1 hour.
  • Remove the foil and continue baking for another 30 minutes, or until the potatoes are easily pierced with a fork.
  • Let the casserole rest for 10 minutes before slicing and serving.
