Grilled Chicken Kabobs

Succulent grilled chicken pieces, marinated to enhance flavor and paired with a medley of vibrant vegetables, these kabobs offer a colorful and satisfying meal. Simple to prepare, they can also be easily broiled indoors for convenience.

Ingredients

  • 1 tablespoon chopped parsley
  • 1 red onion cut into 1-inch chunks
  • 1/4 cup honey
  • 1 red bell pepper diced into 1-inch squares
  • 1/3 cup soy sauce
  • 2 small zucchini sliced into 1-inch rounds
  • 1 pound boneless skinless chicken breasts, cubed into 1-inch pieces
  • 1/4 cup olive oil
  • Salt and black pepper to taste
  • 1 yellow bell pepper chopped into 1-inch sections
  • 1 teaspoon minced garlic

Instructions

  • In a large mixing bowl, blend together the olive oil, soy sauce, honey, garlic, salt, and pepper until well combined.
  • Incorporate the chicken chunks, bell peppers, zucchini slices, and red onion pieces into the marinade, ensuring all are evenly coated.
  • Cover the bowl and allow it to marinate in the refrigerator for no less than one hour, or up to eight hours for enhanced flavor.
  • While marinating, soak wooden skewers in cold water for a minimum of 30 minutes to prevent burning.
  • Preheat a grill or grill pan to medium-high heat.
  • Assemble the skewers by alternating marinated chicken and vegetable pieces.
  • Grill the skewers for approximately 5 to 7 minutes per side, or until the chicken is thoroughly cooked and has developed grill marks.
  • Garnish with chopped parsley before serving.

Notes

Broiler Option: To cook indoors, preheat the broiler and prepare a sheet pan with a light coating of cooking spray. Arrange skewers in a single layer and broil for 5 minutes per side, ensuring even browning.
