Ingredients

  • 1 cup French's crispy fried onions
  • 4 boneless skinless chicken breasts
  • 10.5 oz condensed cream of chicken soup
  • 2 cups beef broth
  • 1 large yellow onion sliced
  • ½ teaspoon thyme leaves
  • 1 oz onion soup mix
  • 6 - 8 slices provolone cheese

Instructions

  • Generously coat the interior of your Crock Pot with non-stick cooking spray.
  • Spread the sliced onions evenly across the bottom.
  • Arrange the chicken breasts over the onion layer.
  • In a mixing bowl, combine the cream of chicken soup, onion soup mix, and beef broth. Whisk until smooth, then pour the mixture over the chicken in the pot.
  • Cover with the lid and set the Crock Pot to LOW. Let the chicken cook undisturbed for 5 hours.
  • After 5 hours, layer the provolone cheese slices over the chicken. Replace the lid and cook until the cheese melts completely, about 10 minutes.
  • Uncover and sprinkle thyme leaves along with the crispy fried onions on top. Cook on LOW for an additional 10 minutes without the lid to warm the topping.
  • Serve immediately over rice or cooked noodles, if desired.

This dish pairs well with a side of steamed vegetables or a fresh salad for a complete meal.
