Generously coat the interior of your Crock Pot with non-stick cooking spray.
Spread the sliced onions evenly across the bottom.
Arrange the chicken breasts over the onion layer.
In a mixing bowl, combine the cream of chicken soup, onion soup mix, and beef broth. Whisk until smooth, then pour the mixture over the chicken in the pot.
Cover with the lid and set the Crock Pot to LOW. Let the chicken cook undisturbed for 5 hours.
After 5 hours, layer the provolone cheese slices over the chicken. Replace the lid and cook until the cheese melts completely, about 10 minutes.
