Preheat your oven to 180°C (350°F) and line a large, shallow baking tray with parchment paper.
In a mixing bowl, combine the dough ingredients: flour, 1 tablespoon of the granulated sweetener, and Greek yogurt. Mix until a cohesive dough forms, and then shape it into a ball.
Lightly dust a clean kitchen surface with flour. Transfer the dough ball to the floured surface and add an additional tablespoon of flour to the dough. Use a rolling pin to roll out the dough into a thin rectangular shape, approximately 1/2 inch thick.
Brush the melted coconut oil over the surface of the dough. Evenly sprinkle the remaining sweetener and cinnamon over the top. Carefully roll the dough from one end to the other, forming a log shape. Slice the log into 12 equal pieces using a sharp knife.
Arrange the slices onto the prepared baking tray. Ensure they are touching slightly if you prefer them to stick together during baking.
Bake in the preheated oven for about 20 minutes, or until the edges start to turn golden brown.
Remove from the oven and let the rolls rest for 10 minutes. While the rolls cool, prepare the glaze by mixing the powdered sugar with Greek yogurt and vanilla extract. Adjust the thickness by adding more yogurt if necessary.
Drizzle the glaze over the cinnamon rolls and serve immediately. Enjoy!
