Ingredients

  • ¼ teaspoon paprika
  • 4 oz extra sharp cheddar cheese
  • ½ teaspoon black pepper
  • 8 oz chickpea pasta or preferred variety
  • ½ teaspoon garlic powder
  • 1 tablespoon arrowroot powder or cornstarch
  • ½ cup 2% cottage cheese
  • 1 cup almond milk or alternative milk

Instructions

  • Prepare the pasta by cooking it in accordance with the instructions on the packaging, then drain thoroughly and set aside. In the bowl of a blender or food processor, combine the cottage cheese, almond milk, cheddar cheese, arrowroot powder, garlic powder, black pepper, and paprika. Process until a smooth and homogenous mixture is achieved. Transfer the blended cheese sauce to a skillet and warm it gently over medium-low heat, stirring occasionally as it simmers for 7 to 8 minutes until slightly thickened. Incorporate the cooked pasta into the sauce, stirring to coat evenly. Serve immediately.

Notes

Each serving is approximately 1 cup, totaling four servings. Maintain medium-low heat while preparing the sauce to prevent separation. This dish is not suitable for freezing; however, leftovers can be refrigerated for up to five days and reheated in a microwave or on the stovetop. For optimal flavor, extra sharp cheddar is recommended. Optional additions include vegetables like broccoli, spinach, peas, or cauliflower, and proteins such as shredded chicken, turkey, shrimp, or baked tempeh to further enhance the nutritional profile.
