Ingredients

  • 1 cup cooked rice
  • 4 boneless skinless chicken breasts
  • 1 ½ cups chicken stock
  • 1 can 10.5 ounces cream of chicken soup
  • 1 medium yellow onion chopped
  • 1 can 15 ounces corn kernels, drained
  • 2 cups shredded cheddar cheese
  • Fresh chopped parsley for garnish

Instructions

  • Place the chicken breasts into the slow cooker and evenly scatter the chopped onion over them. In a separate bowl, mix together the cream of chicken soup and chicken stock until smooth, then pour this mixture over the chicken. Set the slow cooker to cook on low for 8 hours.
  • When the cooking time is complete, remove the chicken and use two forks to shred it into smaller pieces. Return the shredded chicken to the slow cooker, then stir in the cooked rice, cheddar cheese, and drained corn until everything is well combined. Sprinkle with freshly chopped parsley before serving.
