Ingredients

  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup brewed coffee** or substitute with milk
  • 1/3 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs separated
  • 1 1/2 cups milk
  • 1/2 cup vegetable oil
  • 2 teaspoons baking powder
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder

Instructions

  • Preheat the waffle iron, coat with nonstick spray, and keep it ready.
  • In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, sugar, salt, and cinnamon by whisking thoroughly.

  • Pour the egg yolk mixture into the bowl with the dry ingredients and stir until fully incorporated.

  • Spoon the prepared batter into the preheated waffle iron and cook following the manufacturer's instructions until crisp and cooked through.
