Ingredients

  • 1/2 cup dried cranberries
  • 1/2 teaspoon kosher salt
  • 1 cup chopped celery
  • 1/2 cup roasted pecans chopped
  • 1 cup mayonnaise or plain Greek yogurt
  • 1/2 teaspoon ground black pepper
  • 1 cup red seedless grapes halved
  • 4 cups cooked chopped chicken
  • Chopped celery leaves optional

Instructions

  • Combine the cooked, chopped chicken in a large mixing bowl with the celery, halved grapes, dried cranberries, roasted pecans, mayonnaise (or Greek yogurt), salt, and black pepper. Add the chopped celery leaves if desired. Gently stir all ingredients together until just blended. Serve immediately and relish each bite.

Notes

Lighten It Up: Substitute plain Greek yogurt for mayonnaise to reduce calories.
Storage: Keep refrigerated in an airtight container for up to three days. Do not leave at room temperature for more than two hours; if serving outdoors above 90°F, limit to one hour.
