Ingredients

For the filling:

  • 3 tablespoons granulated sugar
  • 1 pound fresh cherries pitted (approximately 1¼ pounds with pits; see note)
  • 1/3 cup orange juice

For the topping:

  • 1 egg
  • 1/2 cup butter softened (see note)
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1/2 cup granulated sugar
  • 1/4 teaspoon baking powder
  • Vanilla ice cream for serving (optional; see note)

Instructions

  • Preheat the oven to 375°F. In a medium mixing bowl, combine the cherries, orange juice, and sugar, stirring until well coated, then spread the mixture evenly in a 9-inch square or round baking dish. In a separate small bowl, whisk together the flour, baking powder, and salt. In another medium bowl, cream together the butter and sugar with a mixer until light and fluffy, about 5 minutes. Beat in the egg along with the vanilla extract. Gradually incorporate the flour mixture in three portions, mixing thoroughly after each addition. Using rounded tablespoons or a small scoop, drop portions of the batter evenly across the cherry filling. Bake for 35 to 40 minutes until the topping is deeply golden and the cherry filling is bubbling at the edges. Allow the cobbler to rest for 10 minutes before serving. Serve warm, accompanied by vanilla ice cream if desired.

Notes

Cherries: Aim for roughly 4 cups (1¼ pounds) of cherries before pitting; you’ll yield about 3½ cups once pitted. Varieties such as Bing, Hudson, Montmorency, or Rainier are all excellent choices.
Butter: To quickly soften butter, cut each stick in half and microwave at 10% power for 1 minute. Check for softness and heat for another 40 seconds at the same power if needed.
Vanilla Ice Cream: Store-bought or homemade vanilla ice cream pairs wonderfully. Whipped cream also makes an indulgent addition.
