Ingredients

  • 2 Tablespoons balsamic vinegar
  • 1 pint cherry tomatoes halved
  • ¼ teaspoon pepper
  • Balsamic glaze for garnish
  • ½ teaspoon salt
  • ¼ cup fresh basil finely chopped
  • 1 cup mozzarella balls
  • 2 Tablespoons olive oil
  • ¼ teaspoon dried oregano or thyme

Instructions

  • Combine the halved cherry tomatoes, mozzarella balls, and finely chopped basil in a large mixing bowl. In a separate smaller bowl, vigorously whisk together the olive oil, balsamic vinegar, salt, pepper, and dried oregano until fully emulsified. Drizzle the prepared dressing over the tomato mixture and gently toss to coat evenly. Cover and refrigerate the salad for approximately 15 minutes to allow the flavors to meld. Just before serving, taste and adjust the seasoning with additional basil, salt, or pepper as needed. Finish with a generous drizzle of balsamic glaze if desired.

Notes

This salad is at its peak flavor when served fresh, though it may be stored in an airtight container in the refrigerator for up to one day.
