Ingredients

For the Fritters:

  • 1/4 cup granulated sugar
  • 3 tablespoons applesauce
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup whole milk
  • 2 large Granny Smith or Honeycrisp apples peeled, cored, and diced
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 1/2 cups all-purpose flour
  • Canola or vegetable oil for deep frying

For the Glaze:

  • 2 cups confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup milk

Instructions

  • In a medium mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon. Form a well in the center of the mixture and incorporate the milk, eggs, and applesauce. Mix gently until just blended. Carefully fold in the diced apples.
  • In a deep fryer, Dutch oven, or heavy-bottomed skillet, heat approximately 1 1/2 inches of oil to 375°F. Spoon about 1/4 cup of batter per fritter into the hot oil, spreading slightly as it enters. Fry for around 2 minutes per side, or until each fritter is a rich golden brown. Remove with a slotted spoon and set on paper towels to drain excess oil.
  • To prepare the glaze, whisk together milk, powdered sugar, and vanilla extract in a medium bowl until smooth. Dip each fritter into the glaze, ensuring both sides are coated evenly. Transfer to a wire rack to set and allow any excess glaze to drip off.
