Ingredients

  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons milk
  • ½ green bell pepper finely chopped
  • ¼ cup tomato sauce
  • 1 tablespoon fresh parsley chopped
  • 1 clove garlic minced
  • 1 pound lean ground beef
  • 1 egg yolk
  • ¼ cup chili sauce
  • cup seasoned bread crumbs
  • ¼ teaspoon salt
  • 2 tablespoons Parmesan cheese shredded
  • ¼ cup onion finely diced (see note)
  • ½ teaspoon Italian seasoning

Instructions

  • Preheat the air fryer to 350°F. In a large bowl, combine the ground beef, green bell pepper, breadcrumbs, onion, milk, Parmesan, parsley, garlic, egg yolk, Italian seasoning, salt, and black pepper. Mix gently until all ingredients are just incorporated. Split the mixture into two equal portions and mold each into compact loaves approximately 5 inches in length and 2 inches in width. Place the loaves into the air fryer basket and cook for 20 minutes. While they cook, mix the tomato sauce and chili sauce in a small bowl to create the topping. Once the initial cook time is complete, spoon the topping over the meatloaves and return them to the air fryer for an additional 5–7 minutes, or until the internal temperature registers 165°F. Let the meatloaves rest for 5 minutes before slicing and serving.

Notes

To mellow the sharpness of the onion, sauté it in a tablespoon of butter until soft, then allow to cool before incorporating. Avoid overmixing the meat to maintain a tender texture. Always preheat the air fryer prior to cooking. Due to variations among air fryer models, it's crucial to use a thermometer to ensure doneness. Monitor cooking closely to avoid overcooking. Letting the meatloaf rest helps it maintain its shape when cut. Store leftovers in a sealed container in the fridge for up to four days.
